Spicy Stir-Fried Water Spinach and Tempe (Tumis Kangkung Tempe Pedas)

This flavorful Tumis Kangkung Tempe Pedas (Spicy Stir-Fried Water Spinach with Tempe) is a vibrant and satisfying dish from Indonesian cuisine, featuring tender water spinach (kangkung) and crisp tempeh cooked with a mix of aromatic spices and rich seasonings. The combination of earthy tempeh and fresh greens is balanced by the heat from red chilies and a hint of sweetness from oyster sauce, creating a mouthwatering stir-fry that’s perfect as a side dish or a main course.

Ingredients:

Ingredient Quantity
Water Spinach (Kangkung) 2-3 bunches, cleaned and cut
Tempe (cut into cubes) Enough to taste
Red chilies (sliced) 8 (adjust to preference)
Bird’s eye chilies (optional for extra heat) 3 (use more for extra spice)
Garlic (crushed and sliced) 2 cloves
Onion (sliced) 1/3 of a medium-sized onion
Masako seasoning (or salt) 1/3 of a Masako packet or to taste
Oyster sauce (Saori brand recommended) To taste
Cooking oil For sautéing

Instructions:

  1. Prepare the Ingredients:

    • Wash and clean the water spinach thoroughly, cutting it into manageable pieces.
    • Slice the tempe into small cubes.
    • Crush and slice the garlic, and thinly slice the onion and red chilies.
  2. Sauté the Aromatics:

    • Heat oil in a large pan or wok over medium heat.
    • Add the garlic and sauté until fragrant.
    • Toss in the sliced onions, followed by the red chilies and bird’s eye chilies (if using for extra heat). Stir-fry briefly until the ingredients are fragrant and the onions become translucent.
  3. Add the Tempe:

    • Stir in the tempe cubes, mixing them with the spices and aromatics. Cook for a few minutes until the tempe starts to brown slightly, creating a crisp texture.
  4. Cook the Water Spinach:

    • Add the water spinach to the pan, tossing it well with the tempe and other ingredients.
    • Pour in a dash of oyster sauce and season with Masako (or salt) to your taste.
  5. Toss and Serve:

    • Stir-fry the ingredients for another 1-2 minutes, just enough to let the water spinach wilt slightly while maintaining its fresh crunch. This ensures the greens stay vibrant and not overcooked.
    • Taste and adjust seasoning if needed.
  6. Serve:

    • Serve the stir-fried kangkung and tempe hot, alongside steamed rice or as part of a main meal.
