Recipe: Mexican Manicotti

Description:
Make this in the morning, bake it that evening. A hearty entree. Our vegetarians can leave out the meat, with great results.

Ingredients:

  • 1 pound lean ground beef
  • 1 tablespoon chili powder
  • 3/4 teaspoon oregano
  • 3/4 cup water
  • 1 cup sour cream
  • 2 1/2 cups shredded Monterey Jack cheese
  • 16 manicotti shells
  • 16 ounces of your favorite sauce
  • 1/4 cup chopped green onion
  • 1/4 cup sliced ripe olives

Instructions:

  1. In a large mixing bowl, combine the uncooked lean ground beef, beans, chili powder, and oregano until well mixed.
  2. Using a spoon, carefully stuff each manicotti shell with the beef mixture.
  3. Grease a 13×9 inch baking pan and arrange the stuffed manicotti shells in it.
  4. In a separate bowl, mix the water and sauce together, then pour it over the stuffed manicotti in the baking pan, ensuring they are evenly coated.
  5. Cover the baking pan and refrigerate it for at least 8 hours to allow the flavors to meld.
  6. Thirty minutes before baking, remove the pan from the refrigerator to bring it to room temperature.
  7. Preheat your oven to 350Β°F (175Β°C).
  8. Cover the baking pan with aluminum foil and bake the manicotti for 1 hour.
  9. After 1 hour, remove the foil and sprinkle the shredded Monterey Jack cheese, chopped green onions, and sliced ripe olives evenly over the top of the manicotti.
  10. Return the baking pan to the oven and bake uncovered for an additional 8 minutes, or until the cheese is melted and bubbly.
  11. Once done, remove the Mexican manicotti from the oven and let it cool for a few minutes before serving.
  12. To serve, add dollops of sour cream on top of each serving for a creamy finish.
