Recipe: Mexican Manicotti

Ingredients:
- 1 pound lean ground beef
- 1 tablespoon chili powder
- 3/4 teaspoon oregano
- 3/4 cup water
- 1 cup sour cream
- 2 1/2 cups shredded Monterey Jack cheese
- 16 manicotti shells
- 16 ounces of your favorite sauce
- 1/4 cup chopped green onion
- 1/4 cup sliced ripe olives

Instructions:
- In a large mixing bowl, combine the uncooked lean ground beef, beans, chili powder, and oregano until well mixed.
- Using a spoon, carefully stuff each manicotti shell with the beef mixture.
- Grease a 13×9 inch baking pan and arrange the stuffed manicotti shells in it.
- In a separate bowl, mix the water and sauce together, then pour it over the stuffed manicotti in the baking pan, ensuring they are evenly coated.
- Cover the baking pan and refrigerate it for at least 8 hours to allow the flavors to meld.
- Thirty minutes before baking, remove the pan from the refrigerator to bring it to room temperature.
- Preheat your oven to 350Β°F (175Β°C).
- Cover the baking pan with aluminum foil and bake the manicotti for 1 hour.
- After 1 hour, remove the foil and sprinkle the shredded Monterey Jack cheese, chopped green onions, and sliced ripe olives evenly over the top of the manicotti.
- Return the baking pan to the oven and bake uncovered for an additional 8 minutes, or until the cheese is melted and bubbly.
- Once done, remove the Mexican manicotti from the oven and let it cool for a few minutes before serving.
- To serve, add dollops of sour cream on top of each serving for a creamy finish.
