Ingredients:

Quantity Ingredient
150g Button mushrooms
125ml Thai fish sauce
6 Thai red curry paste
1 can Coconut milk
1 Dried basil
2 Limes
200ml Olive oil
200g Basmati rice

Instructions:

  1. Prepare Rice:

    • Boil water in a saucepan and cook enough rice for 2 people.
  2. Cook Vegetables:

    • Heat some oil in a frying pan and throw in the beans, cooking for about 2 minutes.
    • Add the peppers and mushrooms, fry for another minute and then add the prawn, chicken stock, fish sauce, curry paste, and herbs.
  3. Simmer:

    • Cook until the beans are tender.
  4. Add Coconut Milk and Lime:

    • Add the coconut milk and lime juice, cooking for a further 2 minutes over medium heat and taking care not to scald the coconut milk.
  5. Serve:

    • Serve over basmati rice, preferably in a shallow bowl.

Tips:

  • Adjust the spice level according to your preference by adding more or less Thai red curry paste.
  • For a twist, you can substitute prawns with chicken or tofu.
