Spicy Tilapia Stir-Fry with Sweet Soy Glaze

Spicy Stir-Fried Tilapia (Oseng Mercon Mujair)

Ingredients:

  • 2 whole tilapia fish
  • A small piece of ginger
  • 3 curly red chilies + 2 jablay red chilies
  • 2 cloves of shallots
  • 1 clove of garlic
  • Salt, to taste
  • Palm sugar, to taste
  • Sweet soy sauce
  • Flavor enhancer, to taste

Instructions:

  1. Frying the Fish: Begin by frying the tilapia fish without any seasoning until it reaches a slightly crispy texture, but not too dry, allowing it to absorb the flavors later. Once done, set aside to drain.

  2. Preparing the Spice Paste: Finely grind the shallots, garlic, jablay chilies, and salt. Thinly slice the ginger and mix it into the ground spices along with the palm sugar.

  3. Sautéing the Aromatics: Slice the remaining shallots and sauté them until fragrant. Add the ground spice mixture along with the ginger and palm sugar. Cook until the mixture is well-cooked and aromatic.

  4. Cooking the Sauce: Add a little water to the sautéed spice mixture and stir well. Add the sweet soy sauce and flavor enhancer to taste, adjusting the seasoning as needed.

  5. Combining the Fish and Sauce: Introduce the previously fried tilapia into the spice mixture. Allow the fish to cook in the sauce until the flavors are fully absorbed, being careful not to overcook.

  6. Serving: Serve the spicy stir-fried tilapia with hot white rice. Enjoy the burst of flavors with each bite, and we guarantee you’ll be asking for seconds.
