Ingredients

Yellow tofu (tahu kuning) 5 pieces
Beef tendon (kikil) 1/4 kg
Spice Paste:

Shallots 5 cloves

Toasted candlenuts (kemiri) 3 pieces
Coriander 1 tsp
Black pepper 1/2 tsp
Fresh turmeric 3 finger lengths
Salt to taste
Sugar to taste
Oyster sauce 1 tsp
Bay leaves 2 pieces
Green chilies 3 pieces

Instructions

  1. Prepare the Tofu: Cut the yellow tofu into small pieces and fry until golden brown. Set aside.
  2. Cook the Tendon: Boil the beef tendon in water with a bit of ginger until tender. Drain and set aside.
  3. Make the Spice Paste: Grind the red chilies, shallots, garlic, candlenuts, coriander, black pepper, and turmeric into a fine paste.
  4. Sauté the Paste: In a pan, sauté the ground spice paste over medium heat until fragrant.
  5. Add Green Chilies: Once the paste is aromatic, add the green chilies and stir well.
  6. Combine Tendon and Tofu: Add the boiled beef tendon to the pan, mixing it thoroughly with the spices.
  7. Final Touches: Gently fold in the fried tofu, then season with salt, sugar, and oyster sauce. If necessary, add a splash of water to create a desired consistency.
  8. Cook Until Dry: Stir-fry until everything is well combined and the sauce thickens slightly.
  9. Taste and Serve: Adjust seasoning if needed, then remove from heat and serve hot.
