Spicy Tofu and Corned Beef Banana Leaf Wraps

Gadon Tahu Kornet: A Delicious Indonesian Delicacy

Ingredients:

  • 4 tablespoons of corned beef (or minced chicken for a different twist)
  • 4 blocks (400 grams) of white tofu, mashed
  • 2 medium-sized eggs, beaten (I used 1 large egg)
  • 2 stalks of green onions, finely sliced
  • Banana leaves for wrapping
  • For the spice blend:
    • 3 fried candlenuts
    • 4 cloves of garlic
    • 6 shallots
    • 3 lime leaves
    • 1 red tomato
    • A pinch of black pepper (ground or whole)
    • 1 teaspoon of salt and 1 teaspoon of sugar (optional)

Instructions:

  1. Prepare the Spice Blend:

    • Heat some oil in a pan. Sauté the spice blend ingredients along with the lime leaves until fragrant. Remove from heat and set aside.
  2. Combine Ingredients:

    • In a large mixing bowl, combine the mashed tofu and corned beef. Add the sliced green onions, the sautéed spice blend, salt, sugar, and black pepper. Mix thoroughly, making sure all the ingredients are well incorporated. Remove the lime leaves from the mixture; you can add sliced bird’s eye chili for extra heat if desired.
  3. Add the Eggs:

    • Incorporate the beaten eggs into the tofu mixture and mix well. The eggs will help bind the ingredients together and add richness to the texture.
  4. Wrap the Mixture:

    • Take a portion of the mixture and wrap it in a banana leaf, shaping it into a compact bundle or according to your preference. Secure the wrap with a toothpick to keep everything in place.
  5. Steam the Gadon Tahu Kornet:

    • Prepare a steamer and bring the water to a boil. Place the wrapped bundles in the steamer and steam for about 30 minutes, or until cooked through.
  6. Serve:

    • Once steamed, carefully remove the bundles from the steamer. Let them cool slightly before unwrapping. Enjoy your Gadon Tahu Kornet warm.

Tip: For added spice, you can steam the bird’s eye chilies along with the bundles, keeping them whole for a milder heat or chopped if you prefer more kick.
