Tahu Telor Sambalado

Ingredients

Tofu (firm) 1 package
Kaffir lime leaves 2 leaves
Lemongrass 1 stalk
Galangal 1 small piece
Sugar 1 tablespoon
Salt 1 teaspoon
Cooking oil For frying

Blended Ingredients:
Shallots 4 cloves
Garlic 2 cloves
Curly red chilies 10 pieces
Bird’s eye chili (optional) 2 pieces (add more for extra heat)

Instructions

  1. Prepare the Eggs and Tofu: Begin by boiling the eggs until hard-boiled, then set aside. Next, cut the tofu into cubes and fry them in a pan until golden brown. Remove and set aside.

  2. Sauté the Blended Ingredients: In the same pan, heat some cooking oil and sauté the blended shallots, garlic, and chilies until fragrant.

  3. Add Aromatics: Introduce the bruised lemongrass, kaffir lime leaves, and galangal to the pan. Pour in enough water to create a sauce, then add the sugar and salt.

  4. Combine Ingredients: Once the mixture comes to a gentle simmer, carefully add the fried tofu and boiled eggs to the pan. Stir gently to coat them in the sauce.

  5. Cook Until Saucy: Allow the dish to simmer until the sauce has thickened and reduced, ensuring the flavors meld beautifully.

  6. Serve: Once the water has evaporated to your liking, remove from heat and serve your Tahu Telor Sambalado hot, perhaps alongside steamed rice for a delightful meal!
