Tahu Telor Sambalado Recipe

Ingredients:
- 2 large eggs
- 1 package tofu
- 2 kaffir lime leaves (daun jeruk)
- 1 stalk lemongrass (sereh)
- 1 thumb-sized piece of galangal (lengkuas)
- 1 tablespoon sugar
- 1 teaspoon salt
- Cooking oil for frying
- Water as needed
For the Spice Paste:
- 4 shallots (bawang merah)
- 2 cloves garlic
- 10 curly red chilies (cabe keriting)
- 2 red bird’s eye chilies (cabe merah rawit, adjust quantity for desired heat)

Prepare the Ingredients:
- Reboil the eggs until they are hard-boiled. Once cooked, peel and set aside.
- Cut the tofu into cubes.

Fry the Tofu and Eggs:
- Heat oil in a frying pan over medium heat.
- Fry the tofu cubes until they are golden and crispy. Remove from the pan and drain on paper towels.
- In the same pan, fry the hard-boiled eggs until they develop a slightly crispy outer layer. Set aside with the tofu.

Make the Spice Paste:
- In a blender or food processor, combine the shallots, garlic, curly red chilies, and red bird’s eye chilies. Blend into a smooth paste.

Cook the Sambal:
- In a separate pan, heat a bit of oil over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
- Crush the lemongrass and galangal, and add them to the pan along with the kaffir lime leaves. Sauté for a minute to release their flavors.
- Add water to the pan, followed by the sugar and salt. Stir well and bring to a simmer.

- Add the fried tofu and eggs to the pan. Stir to coat them evenly with the sambal sauce.
- Simmer until the sauce thickens and reduces, and the tofu and eggs absorb the flavors, about 10-15 minutes.
