Tahu Telor Sambalado Recipe

Tahu Telor Sambalado is a flavorful Indonesian dish featuring fried tofu and eggs simmered in a spicy and aromatic sambal sauce. This dish combines crispy tofu and eggs with a savory blend of spices, creating a delightful and satisfying meal. Follow this recipe to make Tahu Telor Sambalado at home.

Ingredients:

  • 2 large eggs
  • 1 package tofu
  • 2 kaffir lime leaves (daun jeruk)
  • 1 stalk lemongrass (sereh)
  • 1 thumb-sized piece of galangal (lengkuas)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • Cooking oil for frying
  • Water as needed

For the Spice Paste:

  • 4 shallots (bawang merah)
  • 2 cloves garlic
  • 10 curly red chilies (cabe keriting)
  • 2 red bird’s eye chilies (cabe merah rawit, adjust quantity for desired heat)

Instructions:

  1. Prepare the Ingredients:

    • Reboil the eggs until they are hard-boiled. Once cooked, peel and set aside.
    • Cut the tofu into cubes.
  2. Fry the Tofu and Eggs:

    • Heat oil in a frying pan over medium heat.
    • Fry the tofu cubes until they are golden and crispy. Remove from the pan and drain on paper towels.
    • In the same pan, fry the hard-boiled eggs until they develop a slightly crispy outer layer. Set aside with the tofu.
  3. Make the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, curly red chilies, and red bird’s eye chilies. Blend into a smooth paste.
  4. Cook the Sambal:

    • In a separate pan, heat a bit of oil over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.
    • Crush the lemongrass and galangal, and add them to the pan along with the kaffir lime leaves. Sauté for a minute to release their flavors.
    • Add water to the pan, followed by the sugar and salt. Stir well and bring to a simmer.
  5. Combine and Simmer:

    • Add the fried tofu and eggs to the pan. Stir to coat them evenly with the sambal sauce.
    • Simmer until the sauce thickens and reduces, and the tofu and eggs absorb the flavors, about 10-15 minutes.
  6. Serve:

    • Once the sauce has thickened and the tofu and eggs are well-coated, remove from heat.
    • Serve hot with steamed rice or as part of a larger meal.
