Tumis Buncis Tahu Pedas: Spicy Stir-Fried Green Beans with Tofu
Ingredients:
- 300 grams green beans (buncis), trimmed and cut into bite-sized pieces
- 1 large block of tofu, cut into small cubes
- For the Spice Paste:
- 4 shallots
- 2 cloves garlic
- 3 large red chilies
- 5 bird’s eye chilies (adjust to taste for spiciness)
- 1 stalk of lemongrass (laos), crushed
- 2 bay leaves
- Salt to taste
- Black pepper to taste
- 1 tablespoon sweet soy sauce (kecap manis)
- A splash of water

Prepare the Tofu:
- Cut the tofu into small, even cubes. Heat oil in a pan and fry the tofu cubes until golden brown and crispy on the outside but still tender inside. Be careful not to over-fry; the skin should remain soft. Once done, remove the tofu from the pan and set aside.

- Cut the green beans into small pieces according to your preference.

Make the Spice Paste:
- Blend the shallots, garlic, red chilies, bird’s eye chilies, and crushed lemongrass into a smooth paste.

- Heat a bit of oil in the same pan. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.

- Add the green beans to the pan. Stir well and cook until the beans are tender, adding a splash of water if necessary to prevent sticking.

- Add the fried tofu cubes into the pan with the green beans. Mix well to ensure the tofu and beans are coated with the spice paste. Season with salt, black pepper, and sweet soy sauce. Stir-fry for a few more minutes to allow the flavors to meld together.
