Simple Sawi Tahu Soup Recipe
Ingredients:
- 2 bunches of green mustard greens (sawi hijau)
- 3 blocks of firm tofu (tahu putih)
- 3 cups of water
- For the Spice Paste:
- 7 bird’s eye chilies (cabe rawit)
- 2 cloves of garlic
- 4 shallots (bawang merah)
- 2 tomatoes
- 1/2 teaspoon of fine salt
- 1/2 packet of seasoning powder
- Cooking oil, as needed
Instructions:

Prepare the Vegetables:
- Slice the green mustard greens into bite-sized pieces, wash thoroughly, and drain.
- Cut the tofu into small, elongated pieces or to your preference, and rinse the tofu before cutting to remove any impurities.

Prepare the Spice Paste:
- Slice the shallots and tomatoes and set aside.
- In a mortar and pestle, grind the bird’s eye chilies with the salt until finely ground. Add the garlic and continue to grind until well blended. Finally, incorporate the sliced tomatoes and grind everything together to form a smooth paste. Set this aside.

Cook the Soup Base:
- Heat some cooking oil in a pan over medium heat. Add the sliced shallots and sauté until fragrant and slightly crispy.
- Add the prepared spice paste to the pan and cook for a few minutes until the mixture is aromatic and starts to darken slightly.
- Pour in the water and bring the mixture to a boil.

Finish the Soup:
- Once the soup base is boiling, add the tofu pieces and green mustard greens. Allow the soup to come to a boil again.
- Season with the seasoning powder, stirring well to combine. Let the soup simmer for a few more minutes until the greens are tender and the flavors have melded together.
