Ingredients:

  • Mustard greens (sawi): 2 cups, chopped
  • Carrots (wortel): 1 medium, sliced
  • Tofu (tahu): 200 grams, diced
  • Tomato (tomat): 1 large, chopped
  • Shallots (bawang merah): 3, thinly sliced
  • Garlic (bawang putih): 3 cloves, minced
  • Green chili (cabe hijau): 2, thinly sliced
  • Bird’s eye chili (cabe rawit): 2, sliced (adjust to taste)
  • Salt (garam): to taste
  • Seasoning (penyedap): to taste
  • Cooking oil (minyak): 2 tablespoons
  • Egg (telor): 1, beaten
  • Bay leaves (daun salam): 2
  • Galangal (laos): 1 inch, sliced

Steps:

  1. Prepare the Aromatics: Heat the cooking oil in a large skillet or wok over medium heat. Add the sliced shallots, minced garlic, green chilies, and bird’s eye chili. Sauté until the aromatics are fragrant and the shallots are translucent.

  2. Infuse the Flavors: Add the sliced galangal and bay leaves to the skillet. Continue to stir-fry for another 1-2 minutes until the spices release their aroma.

  3. Cook the Egg: Push the aromatics to one side of the skillet. Pour the beaten egg into the empty side and scramble it gently until it’s half-cooked.

  4. Add the Tofu and Vegetables: Incorporate the diced tofu and sliced carrots into the skillet. Stir well to combine with the egg and aromatics.

  5. Add Greens and Seasonings: Toss in the chopped mustard greens and add just enough water to create a light steam. Season with salt and seasoning to taste. Add the chopped tomato and stir until the tomato begins to soften and blend into the mixture.

  6. Finish and Serve: Once the mustard greens are wilted and tender, and the tofu is heated through, remove the skillet from the heat. Discard the bay leaves and galangal slices before serving.
