Oseng Tofu and Oyster Mushroom Stir-Fry
Ingredients:
- 1 package of oyster mushrooms
- 1 block of firm tofu
- 2 large eggs
- 2 cloves of garlic
- 6 shallots
- 2 large red chilies
- 5 bird’s eye chilies (adjust for spiciness)
- Ground black pepper to taste
- 1 teaspoon salt
- 1 teaspoon mushroom broth seasoning (or any other broth)
- 1 small packet of soy sauce (e.g., ABC brand)
- Water as needed
- Cooking oil
Instructions:
-
Prepare the Tofu: Cut the tofu into small cubes. Heat oil in a pan over medium heat and fry the tofu cubes until they are golden and crispy. Once done, remove and drain on paper towels to remove excess oil.
-
Prepare the Mushrooms: While the tofu is frying, shred the oyster mushrooms into bite-sized pieces. Rinse them thoroughly and drain well.
-
Cook the Eggs: Once the tofu is fried and drained, use the same pan to scramble the eggs. Pour the eggs into the pan and cook, stirring frequently, until they are fully cooked and broken into pieces. Remove from the pan and set aside.
-
Sauté the Aromatics: In the same pan, add a little more oil if needed. Sauté the chopped shallots, minced garlic, and sliced red chilies until they become fragrant and slightly caramelized.
-
Add Flavorings: Pour a small amount of water and the soy sauce into the pan. Allow it to come to a gentle boil.
-
Combine Ingredients: Once the water is boiling, add the shredded mushrooms, fried tofu, and scrambled eggs. Stir well to combine all the ingredients.
-
Season and Adjust: Season with salt, mushroom broth seasoning, and ground black pepper. Taste and adjust the seasoning as needed.
-
Final Cooking: Let the mixture cook for a few more minutes, allowing the flavors to meld and ensuring everything is heated through.
-
Serve: Once cooked to your liking, remove from heat. Serve hot as a delicious side dish or main course.
