Tahu Tempe Telur Balado

Ingredients

Eggs 3
Red Chilies 3
Curly Red Chilies 3
Garlic 4 cloves

Instructions

  1. Begin by boiling the eggs until fully cooked, then peel them and set aside for frying later.
  2. Heat a generous amount of oil in a pan and carefully fry the tofu and tempeh until they are golden brown, ensuring they don’t become overly dry.
  3. While the tofu and tempeh are frying, prepare the spice mix: finely grind the garlic, red chilies, and curly red chilies using a mortar and pestle or a food processor until they form a smooth paste.
  4. Once the tofu and tempeh are done, remove them from the pan and set aside. In the same pan, add more oil if necessary, then sauté the ground spice mix until it becomes fragrant and well-cooked.
  5. Add the fried tofu, tempeh, and eggs into the pan with the sautéed spices. Gently stir to combine all the ingredients.
  6. Pour in a small amount of water to create a light sauce, then season with sugar and salt. Taste and adjust the seasoning as needed.
  7. Cook for an additional few minutes, allowing the flavors to meld together.
