Cook the Rice: Begin by bringing a pot of salted water to a boil, then add the basmati rice and cook according to package instructions. Once cooked, drain the rice and set it aside.

Prepare the Vegetables: While the rice is cooking, wash the cherry tomatoes and cut them in half. Next, heat a drizzle of olive oil in a pan over medium heat, then add the chopped eggplant. Sauté the eggplant until it softens and begins to brown.

Cook the Tomatoes: In the same pan, add another drizzle of olive oil, followed by the halved cherry tomatoes. Cook them for a few minutes until they start to release their juices and soften.

Prepare the Tofu: While the vegetables are cooking, slice the tofu into 1 cm thick slices. Heat another drizzle of olive oil in a separate pan and add a sprig of rosemary. Once the oil is hot, place the tofu slices in the pan. Increase the heat and cook the tofu for about 2-3 minutes per side, until golden brown and slightly crispy. Once done, remove from the pan and set aside.

Assemble the Dish: In the same pan where the tofu was cooked, add another drizzle of olive oil and add the cooked basmati rice. Stir-fry the rice for a couple of minutes, then add the sautéed vegetables (eggplant and tomatoes) to the pan. Toss everything together, ensuring that the flavors meld.

Season and Serve: Turn off the heat, then season with freshly chopped chives, salt, and black pepper to taste. For an added kick, finely chop the fresh chili pepper and sprinkle it over the dish. Serve the spicy stir-fried tofu rice warm, still slightly steaming.
