Tumis Tahu Orak-Arik Kemangi

Ingredients:

  • 1 block of tofu (tahu), crumbled
  • 2 bunches of kemangi (lemon basil)
  • 10 small red chilies (cabai rawit)
  • 3 curly red chilies (cabai merah keriting)
  • 2 cloves of garlic
  • 1 small tomato
  • Palm sugar (gula jawa), to taste
  • Oil for sautéing
  • Salt, to taste

Instructions:

  1. Prepare the Tofu: Start by crumbling the tofu into a fine texture. You can use your hands or a fork to achieve this.

  2. Prepare the Vegetables and Spices: Slice the garlic, red chilies, and tomato into thin pieces. Set them aside.

  3. Prepare the Kemangi: Wash the kemangi leaves thoroughly and then cut them into smaller pieces.

  4. Sauté the Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the sliced garlic, chilies, and tomato. Sauté until fragrant and the vegetables begin to soften.

  5. Add the Kemangi: Add the chopped kemangi leaves to the pan. Stir-fry briefly until the leaves begin to wilt and release their aroma.

  6. Incorporate the Tofu: Add the crumbled tofu to the pan. Mix well with the sautéed vegetables and kemangi.

  7. Season the Dish: Add a small amount of palm sugar to balance the flavors. Season with salt to taste. Stir everything together.

  8. Adjust Consistency: Pour in a small amount of water to help combine the ingredients and prevent them from sticking. Let the mixture cook until the water has mostly evaporated and the tofu is well-cooked.

  9. Finish Cooking: Continue to cook the dish until the flavors meld together and the tofu is slightly crispy around the edges.

  10. Serve: Once the liquid has reduced and the dish has a good consistency, transfer it to a serving plate. Serve hot with steamed rice or as a side dish.
