Spicy Tahu Giling with Shrimp Paste

Ingredients:

  • 3 large blocks of tofu
  • 2 cloves garlic

  • Monosodium glutamate (MSG), to taste
  • A small piece of shrimp paste, toasted
  • 1 tablespoon cooking oil

Instructions:

  1. Prepare the Tofu: Heat the cooking oil in a pan over medium heat. Add the tofu blocks and fry them until they turn golden brown. Once cooked, remove the tofu from the oil and drain on paper towels to remove excess oil.

  2. Prepare the Spice Paste: In a mortar and pestle or food processor, grind the garlic, bird’s eye chilies, toasted shrimp paste, salt, and MSG until you achieve a slightly coarse paste. The texture should be rough, not smooth.

  3. Combine Ingredients: Add the tablespoon of cooking oil to the spice paste and mix well. Break the fried tofu into smaller pieces and combine it with the spice paste. Mix thoroughly to ensure the tofu is evenly coated with the paste.
