Ingredients:

  • 300 grams Tomatoes (finely chopped)
  • 6 cloves Garlic
  • 2 Green Chilies
  • 1 teaspoon Red Chili Powder (to taste)
  • Salt (to taste)
  • 1 teaspoon Mustard Seeds (Rai/Kadugu)
  • Oil

Preparation Time: 20 minutes
Cook Time: 10 minutes

Instructions:

  1. Begin by preparing the ingredients: chop the tomatoes, peel the garlic, and gather all other ingredients.
  2. Heat a tablespoon of oil in a heavy-bottomed pan over medium heat. Add the mustard seeds and allow them to crackle.
  3. Add the garlic to the pan and sauté for a few minutes, letting it roast until the aroma becomes fragrant.
  4. Once the garlic is well roasted, add the chopped tomatoes and sauté on low to medium heat. Cook the tomatoes until they soften and become mushy, allowing most of the water to evaporate. The mixture should be thickened.
  5. Stir in the red chili powder and salt, adjusting to taste.
  6. Once the tomatoes reach the desired consistency, use a hand blender to pulse the chutney into a semi-smooth texture.
  7. Transfer to a serving bowl and serve your Tomato Garlic Chutney as a spread over breads, alongside parathas, or with Litti Choka. Enjoy the fresh and zesty flavors!
