Ingredients:

  • 2 pieces of grilled tuna, shredded
  • 2 blocks of stink beans (bitter beans), peeled and diagonally sliced
  • 1 leaf turmeric, thinly sliced
  • 2 leaves kaffir lime, thinly sliced
  • 1 tablespoon lime juice
  • 7 shallots, thinly sliced
  • Salt and seasoning to taste

Spice Paste:

  • 10 red chilies
  • 20 bird’s eye chilies
  • 3 cloves garlic
  • 1/2 tomato

Steps:

  1. Grill the tuna until cooked through, then shred and set aside.
  2. Peel and slice the stink beans, then fry until half-cooked.
  3. Sauté the sliced shallots until fragrant, then add the spice paste, turmeric leaves, and kaffir lime leaves.
  4. Stir continuously until the spices are almost cooked, then add the lime juice, salt, and seasoning. Mix well.
  5. Reduce the heat, add the shredded tuna and stink beans, and stir-fry until combined.
  6. Serve hot.
