Title: Tuna and Stink Bean Stir-Fry
Ingredients:
- 2 pieces of grilled tuna, shredded
- 2 blocks of stink beans (bitter beans), peeled and diagonally sliced
- 1 leaf turmeric, thinly sliced
- 2 leaves kaffir lime, thinly sliced
- 1 tablespoon lime juice
- 7 shallots, thinly sliced
- Salt and seasoning to taste
Spice Paste:
- 10 red chilies
- 20 bird’s eye chilies
- 3 cloves garlic
- 1/2 tomato
Steps:
- Grill the tuna until cooked through, then shred and set aside.
- Peel and slice the stink beans, then fry until half-cooked.
- Sauté the sliced shallots until fragrant, then add the spice paste, turmeric leaves, and kaffir lime leaves.
- Stir continuously until the spices are almost cooked, then add the lime juice, salt, and seasoning. Mix well.
- Reduce the heat, add the shredded tuna and stink beans, and stir-fry until combined.
- Serve hot.
