- 3 pieces of tuna (tongkol)
- 10 small red chilies (cabe rawit)
- 5 curly red chilies (cabe keriting)
- 5 shallots (bawang merah)
- 3 cloves of garlic (bawang putih)
- Fresh scallions (daun bawang), to taste
- Cooking oil
- Seasoning to taste (salt, Royco, white sugar)

Prepare the Tuna: Begin by frying the tuna pieces in a generous amount of cooking oil until they are golden brown and cooked through. Once done, remove the tuna from the oil and set it aside to drain excess oil.

Make the Sambal Paste: While the tuna is frying, prepare the sambal paste. In a mortar and pestle or a food processor, blend the shallots, garlic, small red chilies, curly red chilies, and tomatoes until smooth.
