Ikan Nila Kuah Kuning: A Flavorful Indonesian Delight

Ingredients:

  • 2 medium-sized Nile tilapia fish
  • For the Spice Paste:
    • 6 shallots
    • 2 garlic cloves
    • 1 thumb-sized piece of turmeric, roasted

    • 3 kaffir lime leaves
    • 1 bay leaf
    • 1 stalk lemongrass, white part only
    • Whole chilies (to taste)

Instructions:

  1. Prepare the Fish:

    • Clean the tilapia and rub it with lime juice. This helps to eliminate any fishy odor.
  2. Fry the Fish:

  3. Make the Spice Paste:

    • Blend the shallots, garlic, and roasted turmeric until you have a smooth paste.
  4. Cook the Spice Paste:

    • In a pan, sauté the spice paste until it releases a fragrant aroma.
  5. Combine Ingredients:

    • Add water to the pan with the sautéed spice paste and bring it to a simmer.
  6. Add the Spice Bundle:

    • Introduce the kaffir lime leaves, bay leaf, lemongrass, and whole chilies to the simmering liquid.
  7. Add the Fish:

    • Gently place the fried fish into the pot.
  8. Season the Dish:

    • Season with salt and pepper to taste.
  9. Adjust the Flavor:

    • Taste the broth and adjust the seasoning if necessary.
  10. Finish the Dish:

    • Add a squeeze of lime juice and tomato quarters to the pot.
  11. Garnish and Serve:

    • Garnish with fresh Thai basil leaves and serve hot.
