Yellow-Spiced Tuna with Green Chili

This delightful Indonesian dish, Tongkol Bumbu Kuning Cabe Hijau, features tuna and tofu in a vibrant, yellow spiced sauce, complemented by green chilies for a burst of heat. It’s perfect for those who enjoy bold flavors and a touch of spice.

Ingredients:

  • 6 medium-sized tuna steaks
  • 6 pieces of white tofu

For the Spice Paste:

  • 15 small red chilies
  • 3 red chilies
  • 5 shallots
  • 3 garlic cloves
  • 2 small tomatoes
  • 1 thumb-sized piece of turmeric

Additional Ingredients:

  • 1 stalk lemongrass, smashed
  • 1 thumb-sized piece of ginger, smashed
  • 1 thumb-sized piece of galangal, smashed
  • 3 bay leaves
  • 1 stalk green onion, sliced
  • 2 green chilies, sliced
  • Sugar, to taste
  • Salt, to taste
  • Masako (or other seasoning powder), to taste
  • Water
  • Juice of ½ lime (optional)

Instructions:

  1. Fry the Tuna and Tofu:

    • Heat oil in a pan and lightly fry the tuna steaks and tofu until they are half-cooked. Set aside.
  2. Prepare the Spice Paste:

    • Blend the red chilies, small red chilies, shallots, garlic cloves, tomatoes, and turmeric into a smooth paste.
  3. Cook the Spice Paste:

    • In a separate pan, heat a little oil over medium heat. Sauté the spice paste until fragrant.
  4. Add Additional Ingredients:

    • Incorporate the smashed lemongrass, ginger, and galangal into the pan with the spice paste. Stir and cook until the green chilies start to wilt.
  5. Simmer the Dish:

    • Pour in 1 to 2 cups of water and bring the mixture to a boil. Adjust the seasoning with sugar, salt, and Masako to taste.
  6. Combine and Cook:

    • Add the fried tuna and tofu to the pan. Allow the dish to simmer until fully cooked and the flavors meld together.
  7. Final Touches:

    • If desired, squeeze in the juice of half a lime for an extra layer of flavor.
  8. Serve:

    • Garnish with sliced green onions and serve hot. Enjoy this rich and flavorful dish with steamed rice or as part of a larger Indonesian meal.
