Gelatin sheets 10 g
Multifloral honey 35 g

Dark chocolate 50 g

Instructions:

  1. Prepare the Gelatin: Begin by soaking the gelatin sheets in cold water for about 10 minutes until softened.

  2. Whip the Cream: In a large mixing bowl, pour 500 g of fresh liquid cream. Add the seeds from the vanilla pod and whisk the cream until it forms soft peaks. The cream should be well-whipped and stiff.

  3. Dissolve the Gelatin: In a small saucepan, heat the remaining 10 g of cream. Once heated, turn off the heat and add the soaked gelatin, ensuring it’s fully squeezed of excess water. Stir until completely dissolved.

  4. Combine the Gelatin and Cream: Gently fold the gelatin mixture into the whipped cream using a spatula. Be careful not to deflate the whipped cream. The mixture should be smooth and well-combined.

  5. Fill the Molds: Pour the cream mixture into small molds, filling them up to the rim. Reserve any extra cream mixture to top the sweets later.

  6. Chill the Sweets: Place the molds in the refrigerator and let them chill for at least 2 hours to allow the mixture to set and firm up.

  7. Create a Hollow Center: Once the sweets are firm and chilled, carefully remove the molds from the refrigerator. Use a small spoon to hollow out the center of each sweet, leaving a rim around the edges.

  8. Add Strawberry Jam: Fill the hollowed-out centers with strawberry jam, pressing gently to ensure it stays in place.

  9. Top with More Cream: Use the reserved cream to cover the jam, leveling the surface to smoothen it out.

  10. Decorate with Pavesini: Place 5 Pavesini biscuits on the edges of each sweet to create a circular pattern. These biscuits will act as the “spiderweb” base.

  11. Melt the White Chocolate: Melt the white chocolate in a heatproof bowl over a pot of simmering water or in the microwave. Once melted, let it cool slightly before drizzling it over the surface of the sweets. The white chocolate should firm up relatively quickly.

  12. Melt the Dark Chocolate: In a separate bowl, melt the dark chocolate, then let it cool slightly. Transfer the melted dark chocolate into a paper piping bag (or make a simple one with parchment paper).

  13. Create the Spiderweb Design: Once the white chocolate has set, use the dark chocolate to draw a spiderweb design on the top of each sweet. Start from the center and work outward, making sure to create fine lines to mimic the look of a spiderweb.

  14. Chill Again: Place the decorated sweets back into the refrigerator for a short while to let the chocolate solidify.
