Instructions

  1. Cook the Rajma (Kidney Beans):
    Start by soaking the rajma (kidney beans) overnight in water. After soaking, drain the water and pressure cook the rajma in fresh water for about 2 whistles. Once done, set it aside.

  2. Prepare the Stir-Fry:
    Heat oil in a pan or wok over medium heat. Add cumin seeds and asafoetida, allowing them to splutter for about 10 seconds.

  3. Cook the Aromatics:
    Add finely chopped garlic to the pan and sauté for about 20 seconds until it releases a fragrant aroma. Then, add the chopped onion and green chili, cooking them until the onion turns soft and translucent.

  4. Add Spinach and Rajma:
    Add the chopped spinach to the pan and sauté until it wilts down. Next, add the cooked rajma (kidney beans) and stir everything together.

  5. Spice it Up:
    Add turmeric powder, garam masala powder, and salt to taste. Mix well, ensuring that the spices are evenly coated with the rajma and spinach.

  6. Cook Together:
    Let the mixture cook for about 10 minutes on low heat, stirring occasionally to prevent it from sticking to the bottom of the pan.

  7. Serve:
    Once cooked, turn off the heat and serve the Rajma Saghwala hot with roti or steamed rice. For an extra treat, you can pair it with Gujarati dal and kachumber salad.
