Ingredients:

  • 4 ounces spaghetti
  • 2 boneless, skinless chicken breast halves
  • 1 tablespoon olive oil
  • 3 garlic cloves
  • 1/2 red onion
  • 2 cups fresh spinach
  • 1 (14.5 ounces) can stewed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons fresh parsley
  • 2 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup grated sharp cheddar cheese

Instructions:

1 Cook spaghetti al dente according to package instructions, drain, and set aside. 15 min
2 Heat olive oil in a large saucepan over medium heat.
3 Add minced garlic and chopped red onion to the saucepan. Cook until soft, but not browned.
4 Cut the chicken breast into bite-sized pieces and add them to the saucepan. Cook until browned on all sides.
5 In a blender or food processor, combine stewed tomatoes, dried basil, dried tarragon, salt, crushed red pepper flakes, fresh parsley, garlic, and Parmesan cheese.
6 Pulse until the mixture is just chunky, not smooth.
7 Add the sauce to the chicken mixture in the saucepan. Stir to combine, then simmer for 15 minutes.
8 Preheat the oven to 400°F (200°C).
9 Line an ovenproof casserole dish with fresh spinach leaves.
10 Spread the cooked spaghetti evenly over the spinach.
11 Pour the chicken and sauce mixture over the spaghetti layer.
12 Use a spoon to gently mix the layers, incorporating the spinach throughout.
13 Sprinkle grated Parmesan and sharp cheddar cheese over the top of the casserole.
14 Optionally, add another dash of crushed red pepper flakes for extra heat.
15 Bake in the preheated oven for 20 to 30 minutes, or until the cheese is melted and bubbly.
