Instructions:

    • Shape the mixture into 3/4 inch meatballs.
  2. Soup Base:

    • In a large pot, combine chicken broth, previously cooked spinach (ensure moisture is squeezed out), shredded carrot, small shell pasta, and parsley.
    • Bring the mixture to a vigorous boil over high heat.
  3. Simmer:

    • Once boiling, reduce the heat to a simmer.
    • Cover the pot and let it simmer for approximately 5 minutes, allowing the flavors to meld.
  4. Add Meatballs:

    • Gently place the prepared meatballs into the simmering soup.
    • Cook the soup uncovered for an additional 8-10 minutes, ensuring the meatballs are thoroughly cooked.
  5. Incorporate Eggs:

    • In a separate bowl, beat the egg until well combined.
    • Using a wooden spoon, gradually pour the beaten egg into the simmering soup while stirring continuously.
  6. Final Touches:

    • Remove the soup from the heat once the eggs are incorporated.
    • Cover the pot and let it stand for 2 minutes to allow the eggs to set.
