Description

This Holiday Ham Leftover Casserole is a delightful creation born out of the ingenuity of a mother and daughter duo. Perfect for utilizing those leftover spiral ham slices from Christmas day, this recipe transforms humble ingredients into a comforting and satisfying dish. Paired with a vibrant green vegetable or a crisp salad, it effortlessly completes any meal. Quick, easy, and irresistibly good, you might find yourself intentionally saving some holiday ham just to make this casserole again and again!

Ingredients

  • 4 baking potatoes
  • 3 tablespoons butter
  • 3 tablespoons margarine
  • 1 tablespoon flour
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon dry white wine
  • 1 cooked ham, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Prepare Potatoes: Begin by peeling the potatoes and slicing them very thinly. Pat the slices dry with paper towels and set them aside.

  2. Make Sauce: In a small heavy saucepan, melt the butter over medium heat. Once melted, remove it from the heat and whisk in the flour until smooth. Gradually whisk in the milk, salt, and pepper, then return the saucepan to the heat. Stir constantly until the mixture thickens, which should take about 10 minutes. Once thickened, remove the saucepan from the heat and stir in the dry white wine. Set the sauce aside.

  3. Assemble Casserole: Preheat your oven to 350°F (175°C). Lightly grease an ovenproof casserole dish. Now, it’s time to layer the ingredients. Begin by placing half of the sliced ham at the bottom of the casserole dish, followed by half of the sliced potatoes, half of the sliced onions, half of the sauce, and half of the shredded Monterey Jack cheese. Repeat the layers with the remaining ingredients.

  4. Bake: Cover the casserole dish with a lid or aluminum foil and bake it in the preheated oven for 1 hour. After an hour, remove the cover and continue baking for an additional 15 minutes, or until the cheese is bubbly and lightly golden.

  5. Serve: Once baked to perfection, remove the casserole from the oven and allow it to cool slightly before serving. Scoop generous portions onto plates and enjoy the hearty flavors of this delicious Holiday Ham Leftover Casserole!
