Prepare the Ricotta Base:
Start by mixing the ricotta cheese with the crushed digestive biscuits in a bowl. Melt 50g of white chocolate using a double boiler or microwave, and once slightly cooled, add it to the ricotta-biscuit mixture. Stir vigorously with a wooden spoon until the ingredients are well combined and smooth. -
Form the Eyes:
With the mixture, shape approximately 30 small balls, each around 3 cm in diameter, and slightly flatten them. Allow the mixture to cool slightly before proceeding. -
Dip in White Chocolate:
Melt the remaining white chocolate (350g) and, using a fork, dip each ricotta ball into the melted chocolate. Tap the fork gently to remove any excess chocolate, then place the dipped eyes onto parchment paper. -
Decorate the Eyes:
As soon as the chocolate coating is set, gently place a colored confetti (representing the iris) on the center of each eye. -
Add the Pupils:
Melt the dark chocolate and, using either a piping bag or a toothpick, carefully create a pupil on top of each colored confetti. -
Make the Red Veins:
Prepare the red royal icing by whipping the egg white in a stand mixer until stiff. Gradually sift in the powdered sugar, and continue mixing. Add a few drops of red food coloring until you achieve a vivid red hue. Transfer the royal icing into a piping bag with a very small tip. Carefully pipe the irregular red veins starting from the bottom of each eye, working upwards towards the pupil to create a bloodshot look. -
Chill and Serve:
