Instructions
Step 1: Prepare the Batter
- Start by softening the butter to room temperature. Then, place it in the bowl of a stand mixer and add the sugar. Beat the two ingredients together until light and fluffy, ensuring they are well combined.
- In a separate bowl, sift together the all-purpose flour, potato starch, and baking powder. Add a pinch of salt and set the dry ingredients aside.
Step 2: Mix the Wet and Dry Ingredients
- Add the egg to the butter-sugar mixture, mixing thoroughly until the egg is fully incorporated.
- Gradually add the sifted dry ingredients to the wet mixture, alternating with the fresh cream. Continue to mix until the dough is smooth and well combined.
- Slice the vanilla pod open, scrape out the seeds, and add them to the batter. This will infuse the cookies with a warm, aromatic flavor.
Step 3: Add Food Coloring
- Add a few drops of food coloring (preferably pink) to the mixture, and stir until the batter turns a vibrant pink. Adjust the amount of food coloring to your preferred intensity.
Step 4: Pipe the Dough and Bake
- Transfer the colored dough into a piping bag fitted with a round tip.
- Line a baking tray with parchment paper and pipe the dough into small rounds, each about the size of a cookie.
- Preheat the oven to 180°C (350°F) and bake the whoopie pies in a static oven for approximately 13–14 minutes, or until lightly golden at the edges.
- Once baked, remove from the oven and allow the whoopie pies to cool completely on a wire rack.
Step 5: Assemble the Dentiere
- Once the whoopie pies are cooled, it’s time to create the “teeth.” For the marshmallow teeth, cut the marshmallows into small 1 cm cylinders. Then, use a knife to shape them into square pieces.
- Spread a generous amount of apricot jam on the flat side of one whoopie pie disk.
Step 6: Decorate with Marshmallow Teeth
- Carefully place the marshmallow teeth around the perimeter of the apricot jam-covered side. You can cover the entire circumference or, as shown in the picture, place the marshmallow teeth only on one half of the disk, leaving the back half without teeth for support.
- Sandwich the disks together to form a “whoopie pie” and allow them to set for a bit so the jam adheres and the marshmallow “teeth” stay in place.
Step 7: Serve
- Once the whoopie pies are assembled, leave them to dry for a little while, and your Dentiere are ready to serve!
