Ingredients:

500g Butter
500g Self-raising flour
2 Eggs
10 Vanilla essence

150g Butter (for icing)

2 tbsp Lemon juice
200g White marzipan
1 Cornflour

Instructions:

  1. Preparation:

    • Grease and base line two 3-liter ovenproof pudding basins.
  2. Cake Batter:

    • In a large mixing bowl, combine caster sugar, butter, self-raising flour, baking powder, eggs, and vanilla essence.
    • Beat the mixture well until smooth.
  3. Baking:

    • Divide the batter evenly between the prepared pudding basins.
    • Smooth the surfaces of the batter.
    • Bake at 180°C (350°F) for 1 hour until the cakes are well-risen and firm to the touch.
    • If the cakes start to brown too quickly, cover them with foil.
  4. Cooling:

    • Allow the cakes to cool in the basins for 5 minutes.
    • Then, turn them out onto wire racks to cool completely.
  5. Butter Icing:

    • In a separate bowl, beat together butter, icing sugar, and lemon juice until smooth.
  6. Assembly:

    • Trim the top crust off the cakes to create flat surfaces.
    • Cut each cake horizontally through the middle to create two layers.
    • Spread butter icing followed by jam on the cut surfaces of the cake slices.
    • Sandwich the cake layers together, one on top of the other, to form a round shape.
    • Brush the entire cake with remaining jam.
  7. Marzipan Decoration:

    • Divide the marzipan into 8 equal portions.
