Instructions:

  1. Prepare the dough: Start by making the shortcrust pastry for the biscuits. In the bowl of a stand mixer, combine the flour, sugar, and grated lemon zest. Add the two egg yolks and the whole egg, setting aside the egg whites for later. Mix the ingredients together until well combined.

  2. Shape the dough: Transfer the dough onto a floured surface and knead it briefly until smooth. Wrap the dough in plastic wrap and refrigerate for 30 minutes to make it easier to handle.

  3. Prepare the filling: While the dough is chilling, prepare the pumpkin filling. Wash and peel the pumpkin, then cut it into small pieces. Place the pumpkin in a saucepan with the water and cook over low heat, covered, until it becomes soft and starts to break down (about 20 minutes).

  4. Make the filling: Once the pumpkin is soft, stir in the sugar and the zest of one lemon.
