Ingredients:

  • 3 1/4 cups flour
  • 3 3/4 cups sugar
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1/2 tsp nutmeg
  • 3/4 cup shortening
  • 3/4 cup water
  • 6 tbsp applesauce
  • 1/2 cup eggs (approximately 3 eggs)
  • 6 tbsp raisins
  • 1 tsp cream of tartar
  • 1 1/2 tsp vanilla extract
  • 1 banana (for decoration)

Instructions:

  1. Prepare the Batter:

    • Sift together flour, 2 1/4 cups sugar, baking soda, salt, baking powder, and spices in a large mixer bowl.
  2. Mix Wet Ingredients:

    • Add shortening, 6 tablespoons of orange juice, water, and applesauce; beat for 2 minutes at medium speed.
  3. Incorporate Eggs:

    • Add eggs; beat for an additional 2 minutes.
  4. Add Raisins and Nuts:

    • Blend in raisins and nuts to enrich the batter.
  5. Preheat and Bake:

    • Preheat your oven to 350°F (175°C).
    • Pour the batter into a greased and floured 10-inch tube pan.
    • Bake for 1 hour and 15-20 minutes or until the cake tests done.
  6. Cool the Cake:

    • Allow the cake to cool in the pan for 15-20 minutes.
