Mmm! A delicious alternative to the more traditional tomato salsa. It’s also very low in fat. Note that the cooking time is the marinading time, although this is to taste. This salsa makes a great addition to some Tuna Cakes, another simple recipe.

Instructions
-
Preparation:
- Wash the spring onions and cucumbers thoroughly under cold water. Pat them dry with a clean kitchen towel.
-
Chop the Ingredients:
- Trim the roots and any wilted parts from the spring onions. Finely chop both the green and white parts of the onions and transfer them to a mixing bowl.
- Peel the cucumbers, if desired, or leave the skin on for added texture. Cut the cucumbers in half lengthwise and scoop out the seeds with a spoon. Dice the cucumber flesh into small pieces and add them to the bowl with the spring onions.
-
Mixing:
- Squeeze the juice from the lemon over the chopped spring onions and cucumbers. Gently toss the ingredients together to ensure they are evenly coated with the lemon juice.
-
Marination:
- Allow the mixture to marinate for a short while to let the flavors meld together. This could take about 15 minutes or longer, depending on your preference for the intensity of flavors.
-
Serve and Enjoy:
- Once marinated to your liking, your Spring Onion Salsa is ready to serve. Enjoy it as a refreshing side dish, a topping for grilled meats or fish, or as a dip for tortilla chips.
Storage Tips:
If you have any leftovers, store them in an airtight container in the refrigerator. Consume within a day or two for the freshest taste and texture.
Pairing Suggestions:
- Serve this Spring Onion Salsa alongside grilled chicken breasts or fish for a light and flavorful meal.
- Use it as a topping for tacos or nachos to add a refreshing crunch and tangy kick to your favorite Mexican dishes.
- Enjoy it spooned over a bed of mixed greens for a simple yet satisfying salad.
