Pea, Broad Bean, and Green Bean Frittata

Green Peas (Pisellini) 200g
Green Beans (Fagiolini) 200g
Eggs 5
Pecorino Cheese 40g
Fine Salt To taste

Vegetable Broth To taste

Instructions:

Step 1: Preparing the Legumes
To start preparing the frittata, begin by cleaning the legumes. Trim the ends off the green beans and rinse them thoroughly under cold running water. For the peas, open the pods and carefully extract the fresh peas, placing them in a bowl for later. Once the peas are out, split the broad bean pods in half to reveal the beans. Remove the outer skin of the beans with a gentle squeeze of your fingers. Fresh broad beans will have a bright white interior, while older beans may have a darker skin that should be peeled away.

Step 2: Cooking the Legumes
Heat a non-stick pan over medium heat and add a small drizzle of olive oil. Add a clove of garlic, peeled, and let it brown slightly. Once the garlic has become golden, remove it from the pan and add the peas. Sauté them for about 5-6 minutes, adding a splash of vegetable broth to help them cook through. After this time, add the broad beans to the pan and continue cooking for another 10 minutes or until all the legumes are tender.

Step 3: Preparing the Egg Mixture
While the legumes are cooking, crack the eggs into a bowl. Whisk them well with a spoon or spatula until they are well combined. Season with salt and black pepper to taste. Grate the Pecorino cheese and stir it into the egg mixture to add richness and flavor.

Step 4: Combining the Legumes and Eggs
Once the legumes are tender and cooked through, allow them to cool slightly. Then, mix the legumes into the egg mixture, stirring gently to combine everything evenly.

Step 5: Cooking the Frittata
Transfer the egg and legume mixture into a preheated non-stick pan. Cover the pan with a lid and cook on low heat for about 5 minutes, or until the edges start to set. Then, carefully flip the frittata using the lid, turning it over gently to cook the other side. Let it cook for another 3 minutes without the lid, allowing the frittata to finish setting and achieve a golden, slightly crispy exterior.

Step 6: Serving
Once the frittata has set and reached a nice golden-brown color, it’s ready to serve! You can enjoy it warm, at room temperature, or even cold. It can also be cut into cubes for a delightful appetizer or snack. The pea, broad bean, and green bean frittata makes a perfect light meal or side dish for any occasion.
