Instructions

  1. Prepare the Tempering
    Begin by heating a flat tawa (skillet) over medium heat. Add a small amount of oil, then add the mustard seeds. When they start to splutter, add the curry leaves and let them crackle.

  2. Sauté the Onions
    Add the chopped onions to the tawa and sauté them until they turn translucent, which should take about 3 to 4 minutes.

  3. Add the Sprouted Horse Gram
    Add the sprouted horse gram dal (kollu) to the pan with the onions. Sauté for about 10 minutes, stirring occasionally, until the horse gram is well-coated with the tempering and the onions are golden. Once done, remove the mixture from the heat and let it cool to room temperature.

  4. Combine with Yogurt
    In a mixing bowl, combine the yogurt, chopped tomatoes, cucumber, red chilli powder, and asafoetida. Mix until well blended.

  5. Mix Everything Together
    Once the onion and horse gram mixture has cooled, add it to the yogurt mixture. Stir well to ensure that the ingredients are evenly distributed. Taste and adjust the seasoning as needed.

  6. Serve
    Serve the Kollu Pachadi as a refreshing, nutritious side dish alongside stuffed parathas, rotis, or any flavorful rice dish.
