Ingredients:

  • 2 cups All Purpose Flour (Maida)
  • 1-1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Brown Sugar (Demerara Sugar)
  • 1/2 cup Walnuts, coarsely chopped
  • 2 Whole Eggs (or flax meal egg replacer)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Salted Butter
  • 1/2 cup Milk
  • 1 cup Ripe Bananas, mashed

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Instructions:

  1. Prep the Dry Ingredients:
    In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

  2. Mix Wet Ingredients:
    In a large mixing bowl, whisk together the eggs (or flax meal egg replacer), butter, brown sugar, vanilla extract, and milk until fluffy and well blended.

  3. Combine with Bananas and Flour:
    Add the mashed ripe bananas to the wet ingredients and mix well. Gradually add the sifted flour mixture and beat until just combined.

  4. Prepare the Pan:

    Pour 1 cup of water into the bottom of the Preethi Electric Pressure Cooker and place a trivet at the bottom. Carefully lower the banana bread pan into the cooker.

  7. Release Pressure and Cool:
    Once done, allow the pressure to release naturally. Carefully remove the banana bread pan from the cooker and let it cool before serving.
