Instructions for Making Chiba Dhokli

Step 1: Prepare the Gram Flour Mixture
Start by sieving the gram flour (besan) to ensure it’s smooth and free of lumps. In a mixing bowl, combine the sieved gram flour with chopped green chillies, kasuri methi, asafoetida, turmeric powder, salt, caster sugar, lemon juice, and a little water. Mix well to form a thick, no-dropping batter.

Step 2: Steam the Dhoklis
In a saucepan, heat enough water to bring it to a boil. Take a plate that has a similar diameter to the saucepan. Spread the gram flour batter onto the plate using your hands or a brush, smoothing it out evenly. Place this plate upside down on the saucepan so that the batter does not directly touch the boiling water. The steam from the water will cook the dhoklis. Let it cook for 3-4 minutes until fully set and steam-cooked.

Step 3: Cool and Cut the Dhoklis
Once the dhoklis are done, allow them to cool for a few minutes. Brush some oil on the plate to prevent sticking, and then carefully cut the steamed dhoklis into even strips using a knife or the back of a spoon. Arrange the pieces on a serving plate.

Step 4: Prepare the Tempering
In a small tadka pan, heat 1 teaspoon of oil for tempering. Once the oil is hot, add the mustard seeds. Allow them to splutter, and then add the sesame seeds. Sauté briefly and then turn off the heat.

Step 5: Garnish and Serve
Pour the tempering over the cut dhoklis and sprinkle some methi pickle masala on top to enhance the flavor. Serve immediately for a fresh and satisfying snack.
