Steamed Oriental Ravioli with Vegetables and Shrimp

Ingredients:

Ravioli dough discs 16
Carrots 60g
Zucchini 60g
Eggplant 60g
Shrimp (peeled) 150g
Soybean sprouts 70g
Cabbage (green) 4 leaves
Soy sauce 30g
Extra virgin olive oil 20g
Salt To taste
Black pepper To taste

Instructions:

Step 1: Prep the Ingredients

Start by preparing the vegetables and shrimp for the filling. Peel and cut the carrots, zucchini, and eggplant.

  • For the carrots, remove the ends and slice them into thin strips. Dice them finely.
  • Slice the zucchini and eggplant similarly, into thin strips, then dice them into small cubes (2-3 pieces per vegetable).
  • Clean the shrimp by removing the shells completely, and then roughly chop them into smaller pieces.

Step 2: Cook the Vegetables and Shrimp

In a non-stick pan, heat the olive oil over medium heat.

  • Add the diced carrots and sauté them for about 2 minutes.
  • Next, add the zucchini and cook for another 2 minutes.
  • Add the eggplant and cook for an additional 2 minutes.
  • Now, splash in the soy sauce to deglaze the pan and add flavor to the mix. Stir well to combine the ingredients and cook for another minute.
  • Once all the vegetables have softened slightly, remove from the heat and set the mixture aside to cool.

Step 3: Prepare the Ravioli

Bring water to a boil in a steamer.

  • Carefully remove the ravioli dough discs from their packaging and place them on a flat surface.
  • Spoon about 20-25g of the vegetable and shrimp mixture into the center of each ravioli disc.
  • To seal the ravioli, fold the dough over the filling: First, fold two opposite corners of the disc together to meet in the center, then bring the other two corners to the center. Press the edges together firmly to seal each ravioli.
  • Repeat the process for the remaining discs, ensuring all 16 ravioli are formed.

Step 4: Prepare the Steaming Base

For a delicate touch, take the cabbage leaves and remove the central stem, then cut the leaves into squares that are slightly larger than the ravioli.

  • Wash and dry the cabbage leaves thoroughly.

Step 5: Steam the Ravioli

Once the water in your steamer is boiling, line the steamer tray with the cabbage squares.

  • Carefully place the prepared ravioli on top of each cabbage square.
  • Cover the steamer and steam the ravioli for about 8-10 minutes or until the dough is cooked and the filling is heated through.

Step 6: Serve

Once cooked, carefully remove the ravioli from the steamer and serve immediately.
These steamed Oriental ravioli, filled with a delicious mix of vegetables and shrimp, are a perfect appetizer to kick off any meal with a burst of flavor and color.
