Steamed Shellfish with Vegetables and Citrus Mayonnaise

Cider vinegar 3g
Mandarin juice 25g

Instructions:

Begin by preparing the citrus mayonnaise. Start by squeezing the juice from the mandarin, ensuring you filter it and set it aside for later use. In a blender or immersion mixer, place the egg yolks (at room temperature), adding a pinch of salt, black pepper, and the cider vinegar. Begin blending the mixture, keeping the blades running, and gradually drizzle in the seed oil in a thin stream. Continue blending until the mixture emulsifies into a smooth, creamy mayonnaise.

Once the mayonnaise has formed, add the zest of the orange to the mixture, stirring gently. Transfer the mayonnaise to the refrigerator to chill while you focus on preparing the shellfish and vegetables.

For the vegetables, start by washing and cutting the snap peas into smaller pieces. Next, remove the outer leaves from the Romanesco broccoli, leaving the smaller, more tender florets intact, and cutting the larger pieces in half to ensure even cooking.

Arrange the snap peas on a perforated baking tray, and add the baby carrots on top. This method will make it easier to peel the carrots after they are steamed.

Now, move on to the shellfish. Begin with the prawns, scampi, and canocchie. Keep the heads intact, but peel off the shells, and using a small knife, carefully remove the intestinal tract.

Place the shellfish on top of the prepared vegetables and season with a pinch of salt and black pepper.

Steam the shellfish and vegetables until they are cooked through, with the vegetables tender yet still crisp, and the shellfish perfectly cooked. Serve the steamed shellfish and vegetables with the refreshing, citrus-infused mayonnaise as a delicious dip.
