Simple Pepes Tofu Recipe

Ingredients:

Large tofu blocks 2 pieces
Lemongrass stalks 2 stalks
Kaffir lime leaves 3 leaves
Egg 1
Coconut milk 65 ml
Curly red chilies 5
Small bird’s eye chilies (adjust for spiciness) 3
Garlic cloves 3 cloves
Shallots 3 cloves
Sugar To taste
Salt To taste

Steps:

  1. Prepare the tofu: Using a fork, mash the tofu into a fine consistency. Set it aside.
  2. Blend the spices: In a food processor or mortar, blend the curly chilies, bird’s eye chilies, garlic, and shallots until you get a smooth mixture.
  3. Mix the egg and tofu: In a large bowl, whisk the egg thoroughly, then fold in the mashed tofu. Stir until evenly combined.
  4. Incorporate the spice mix: Add the blended spice mixture to the egg and tofu mix. Stir in the coconut milk, and then add sugar and salt according to your taste preference.
  5. Wrap the mixture: Prepare banana leaves by wiping them clean. Take a portion of the tofu mixture and wrap it securely in the banana leaf, folding the edges to seal it properly.
  6. Steam: Heat a steamer, and once it’s hot, place the banana leaf-wrapped tofu parcels inside. Steam them for about 45 minutes until fully cooked.
  7. Serve: Once the tofu parcels are done steaming, remove them from the steamer and let them cool slightly. Serve warm and enjoy this delightful Indonesian dish!
