Simple Pepes Tofu Recipe

Steps:
- Prepare the tofu: Using a fork, mash the tofu into a fine consistency. Set it aside.
- Blend the spices: In a food processor or mortar, blend the curly chilies, bird’s eye chilies, garlic, and shallots until you get a smooth mixture.
- Mix the egg and tofu: In a large bowl, whisk the egg thoroughly, then fold in the mashed tofu. Stir until evenly combined.
- Incorporate the spice mix: Add the blended spice mixture to the egg and tofu mix. Stir in the coconut milk, and then add sugar and salt according to your taste preference.
- Wrap the mixture: Prepare banana leaves by wiping them clean. Take a portion of the tofu mixture and wrap it securely in the banana leaf, folding the edges to seal it properly.
- Steam: Heat a steamer, and once it’s hot, place the banana leaf-wrapped tofu parcels inside. Steam them for about 45 minutes until fully cooked.
- Serve: Once the tofu parcels are done steaming, remove them from the steamer and let them cool slightly. Serve warm and enjoy this delightful Indonesian dish!
