Ground coriander 1/2 teaspoon

Sugar 1 teaspoon
Mushroom broth to taste

Instructions

  1. Prepare the Banana Leaves:
    Lightly heat the banana leaves over a flame for a few seconds to make them pliable. Set aside.

  2. Make the Spice Paste:
    In a skillet, sauté the ground spice paste until fragrant. Add 2 bay leaves, lemongrass, ground coriander, sugar, salt, and mushroom broth. Stir to combine.

  3. Cook the Mushrooms:
    Add the sliced mushrooms to the sautéed spices and cook briefly—there’s no need to fully cook them.

  4. Combine the Filling:
    Transfer the sautéed mushrooms to a large mixing bowl. Incorporate the remaining uncooked mushrooms, beaten egg, mashed tofu, and thick coconut milk. Mix well and adjust the seasoning to your taste.

    Take a piece of banana leaf, place a bay leaf and a piece of lemongrass in the center, followed by a portion of the filling. Fold and wrap securely.

    Place the wrapped packages in a steamer and steam for 15 to 20 minutes.
