Ingredients:

  • 5-7 blocks of yellow tofu (preferably tahu Kediri)
  • 2 large eggs
  • 200 grams small shrimp (peeled and deveined, remove heads and tails to avoid sharp bits)
  • Juice of 1/2 lime (for marinating the shrimp)

For the Spice Mixture:

  • 3 large red chili peppers
  • 4 bird’s eye chilies (adjust quantity for desired spiciness)
  • 4 cloves garlic
  • 5-6 shallots
  • 1 candlenut (or substitute with macadamia nuts)
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger

Instructions:

  1. Prepare the Shrimp:

    • Clean the shrimp by removing the heads and tails. Squeeze the juice of 1/2 lime over the shrimp and let it marinate for 5-10 minutes. This step will help reduce any fishy smell. After marinating, rinse the shrimp thoroughly and drain well.
  2. Prepare the Spice Mixture:

    • Blend all the spice mixture ingredients—red chili peppers, bird’s eye chilies, garlic, shallots, candlenut, salt, sugar, ground turmeric, and ground ginger—into a smooth paste using a food processor or mortar and pestle.
  3. Prepare the Tofu:

    • Crush or mash the tofu into small pieces. For convenience, you can use a whisk or mixer to break it down if you prefer a smoother texture.
  4. Combine Ingredients:

    • In a large mixing bowl, combine the mashed tofu, spice mixture, marinated shrimp, and eggs. Mix well until all ingredients are thoroughly incorporated.
  5. Season to Taste:

    • Taste the mixture and adjust the seasoning if necessary.
  6. Wrap in Banana Leaves:

    • If using banana leaves, cut them into squares large enough to wrap the mixture. Place a portion of the mixture onto each leaf, fold the sides, and then fold the ends to create a sealed packet. If banana leaves are not available, you can use aluminum foil as an alternative.
  7. Steam the Wraps:

    • Arrange the wrapped packets in a steamer. Steam over medium heat for 15-20 minutes, or until the mixture is fully cooked.
