This delightful Indonesian dish, Pepes Tahu & Udang, is a savory combination of tofu and shrimp wrapped in banana leaves and steamed to perfection. The blend of aromatic spices and the unique flavor of banana leaves make this dish a true treat for the senses. Whether served as a main course or as an appetizer, it’s sure to impress. Let’s dive into the recipe:
Ingredients:
- 5-7 blocks of yellow tofu (preferably tahu Kediri)
- 2 large eggs
- 200 grams small shrimp (peeled and deveined, remove heads and tails to avoid sharp bits)
- Juice of 1/2 lime (for marinating the shrimp)
For the Spice Mixture:
- 3 large red chili peppers
- 4 bird’s eye chilies (adjust quantity for desired spiciness)
- 4 cloves garlic
- 5-6 shallots
- 1 candlenut (or substitute with macadamia nuts)
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
Instructions:
-
Prepare the Shrimp:
- Clean the shrimp by removing the heads and tails. Squeeze the juice of 1/2 lime over the shrimp and let it marinate for 5-10 minutes. This step will help reduce any fishy smell. After marinating, rinse the shrimp thoroughly and drain well.
-
Prepare the Spice Mixture:
- Blend all the spice mixture ingredients—red chili peppers, bird’s eye chilies, garlic, shallots, candlenut, salt, sugar, ground turmeric, and ground ginger—into a smooth paste using a food processor or mortar and pestle.
-
Prepare the Tofu:
- Crush or mash the tofu into small pieces. For convenience, you can use a whisk or mixer to break it down if you prefer a smoother texture.
-
Combine Ingredients:
- In a large mixing bowl, combine the mashed tofu, spice mixture, marinated shrimp, and eggs. Mix well until all ingredients are thoroughly incorporated.
-
Season to Taste:
- Taste the mixture and adjust the seasoning if necessary.
-
Wrap in Banana Leaves:
- If using banana leaves, cut them into squares large enough to wrap the mixture. Place a portion of the mixture onto each leaf, fold the sides, and then fold the ends to create a sealed packet. If banana leaves are not available, you can use aluminum foil as an alternative.
-
Steam the Wraps:
- Arrange the wrapped packets in a steamer. Steam over medium heat for 15-20 minutes, or until the mixture is fully cooked.
-
Serving:
- Serve the Pepes Tahu & Udang warm. For an extra layer of flavor, you can briefly grill the packets after steaming to impart a smoky aroma from the banana leaves. This step adds a delightful charred taste.
Enjoy your Pepes Tahu & Udang as a delicious and aromatic Indonesian-inspired dish that brings a taste of traditional flavors to your table.
