Description:

These sticky, tender spareribs from Jim are a treat for any occasion, featuring his famous homemade BBQ sauce. Perfect for summer gatherings, camping trips, or any time you crave hearty, flavorful ribs.

Ingredients:

  • 1 cup ketchup
  • 1 cup tomato juice
  • 1/2 cup brown sugar
  • 1/2 tsp liquid smoke
  • 1 cup Worcestershire sauce
  • Zest of 1 lime
  • Juice of 1 lime
  • 1/4 cup cider vinegar
  • 1 tsp crushed red pepper flakes
  • 1 tsp cayenne pepper
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup brown sugar (for spice rub)
  • 1 tbsp paprika
  • 1 tbsp ground black pepper
  • 1/2 tsp salt
  • 2 1/2 tbsp chili powder
  • 2 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp cayenne pepper (for spice rub)
  • 1 1/2 cups lager beer

Instructions:

  1. Prepare BBQ Sauce:

    • At least the night before making the ribs, combine ketchup, tomato juice, brown sugar, liquid smoke, Worcestershire sauce, lime zest, lime juice, cider vinegar, crushed red pepper flakes, cayenne pepper, onion, and garlic in a saucepan.
    • Simmer over medium-low heat for 30 minutes.
    • Chill overnight; the sauce keeps well for several months in the refrigerator.
  2. Prepare Spice Rub:

    • The night before making the ribs, combine brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, and cayenne pepper in a bowl. Mix well.
    • Pat about 1/3 of the spice rub onto the top and bottom of the rib slabs.
    • Refrigerate overnight.
  3. Cooking the Ribs:

    • The next day, about 5 hours before serving, remove the ribs from the fridge and sprinkle with half of the remaining spice rub.
    • Let the ribs sit at room temperature for 45 minutes.
    • Take the BBQ sauce out of the refrigerator to allow it to come to room temperature.
    • Preheat the oven to 200-225°F (93-107°C).
  4. Baking:

    • After the ribs have rested at room temperature, place them on a large baking sheet or multiple sheets if necessary.
    • Bake for 4 hours.
    • If the ribs begin to look dry during baking, baste them lightly with beer.
  5. Final Steps:

    • About halfway through the baking time, sprinkle the remaining spice rub over the ribs.
    • Approximately 45 minutes before the ribs are done, brush them liberally with the BBQ sauce.
    • Once the ribs are fully cooked, you can optionally baste them with more BBQ sauce.
    • Let the ribs rest for 10 minutes before cutting into individual ribs or half slabs.
  6. Serving:

    • Serve the ribs with extra BBQ sauce on the side and plenty of napkins for messy fingers!
