Stir-Fried Long Beans with Tempe (Tumis Kacang Tempe)

Ingredients:

Long beans (Kacang Panjang) 1/4 portion
Tempe (Medium-sized block) 1 block
Red chili peppers (Cabai Merah) 4 pieces
Bird’s eye chili peppers (Cabai Rawit) 10 pieces
Garlic (Bawang Putih) 2 cloves
Shallots (Bawang Merah) 5 cloves
Galangal (Laos) 1 small piece
Bay leaves (Daun Salam) 2 leaves
Sweet soy sauce (Kecap Manis) 3 tablespoons
Salt (Garam) To taste
Seasoning (Penyedap Rasa) To taste

Instructions:

  1. Prepare the ingredients: Cut the long beans into small, bite-sized pieces. Slice the tempe into thin strips or cubes. Set aside.

  2. Fry the tempe: Heat a little oil in a pan, and fry the tempe pieces until they are halfway cooked (slightly golden and crispy). Remove from the pan and set aside.

  3. Stir-fry the long beans: In the same pan, add more oil and stir-fry the long beans over high heat until they are just wilted but still green and fresh. Be careful not to overcook them. Remove and set aside.

  4. Sauté the aromatics: In the same pan, add a bit more oil if needed, then sauté the garlic, shallots, and galangal until fragrant and golden brown.

  5. Add the spices: Toss in the bay leaves and both the red chili and bird’s eye chili peppers. Stir everything together for about a minute to release the flavors.

  6. Combine the tempe and long beans: Add the fried tempe and long beans to the pan. Stir well to combine the ingredients.

  7. Season the dish: Add a splash of water to help the ingredients mix. Then, season with salt, sweet soy sauce (kecap manis), and seasoning (penyedap rasa). Stir everything well to ensure the flavors are evenly distributed.

  8. Taste and adjust: Taste the dish and adjust the seasoning as necessary. If you prefer it spicier, feel free to add more chili.
