Stir-Fried Luffa and Tofu Delight

Tumis Oyong Tahu (Stir-Fried Luffa with Fried Tofu)

Ingredients:

  • 6 small pieces of fried tofu
  • 1 luffa (oyong), peeled and sliced
  • 2 shallots, thinly sliced
  • 1 clove garlic, minced
  • 1 green chili, sliced
  • 1 red chili, sliced
  • 1 tablespoon anchovies (terasi)
  • Salt to taste
  • 1 cup water

Instructions:

  1. Begin by cutting the fried tofu into bite-sized pieces. Set aside.

  2. Prepare the luffa by washing it thoroughly, then peeling and slicing it according to your preference.

  3. Slice the shallots and garlic finely. Slice the green and red chilies.

  4. In a pan, heat a small amount of oil over medium heat. Add the anchovies and sauté until fragrant.

  5. Add the sliced shallots, garlic, and both types of chilies to the pan. Cook until the shallots are translucent and aromatic.

  6. Introduce the sliced luffa and tofu into the pan. Stir well and cook until the luffa is half-cooked.

  7. Season with salt to taste, and pour in the water. Stir to combine.

  8. Cover the pan and let it simmer for about 5 minutes, or until the luffa is tender and the flavors meld together.

  9. Remove from heat and serve hot.
