Tumis Oyong Tahu (Stir-Fried Luffa with Fried Tofu)
Ingredients:
- 6 small pieces of fried tofu
- 1 luffa (oyong), peeled and sliced
- 2 shallots, thinly sliced
- 1 clove garlic, minced
- 1 green chili, sliced
- 1 red chili, sliced
- 1 tablespoon anchovies (terasi)
- Salt to taste
- 1 cup water

Begin by cutting the fried tofu into bite-sized pieces. Set aside.

Prepare the luffa by washing it thoroughly, then peeling and slicing it according to your preference.

Slice the shallots and garlic finely. Slice the green and red chilies.

In a pan, heat a small amount of oil over medium heat. Add the anchovies and sauté until fragrant.
