Stir-Fried Spaghetti with Chicken and Prawns

Ingredients:

Ingredient Quantity
Spaghetti 400g
Chicken breast 300g
Prawns (mazzancolle) 500g
Red bell pepper 200g
Yellow bell pepper 200g
Garlic 1 clove
Fresh thyme 2 sprigs
Lime zest 1 lime
Salt to taste
Black pepper to taste
Soy sauce 100g
Olive oil 30g

Instructions:

  1. Prepare the Ingredients
    Begin by slicing the chicken breast into thin strips, then cut those strips in half lengthwise. Slice the red and yellow bell peppers into thin strips as well. Set them aside for later use.

  2. Sauté the Vegetables
    In a large pan or wok, heat a drizzle of olive oil over medium heat. Add the sliced peppers and sauté for a couple of minutes. Then, pour in 50g of soy sauce and stir to combine. Season with freshly cracked black pepper, and cook for another 10 minutes on low heat with a lid on the pan, allowing the peppers to soften.

  3. Cook the Spaghetti
    In a large pot, bring plenty of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve a small ladle of pasta water before draining.

  4. Cook the Chicken and Prawns
    While the pasta is cooking, add the sliced chicken to the pan with the peppers. Stir-fry for about 5 minutes until the chicken starts to brown. Add the prawns to the pan and cook for an additional 3-4 minutes until they turn pink and are fully cooked.

  5. Combine the Spaghetti and Sauce
    Once the spaghetti is ready and drained, add it directly to the pan with the chicken, prawns, and peppers. Pour in the reserved pasta water to help the sauce coat the noodles. Mix everything well and let it cook for a couple of minutes, allowing the pasta to absorb the flavors of the sauce.

  6. Finish and Serve
    Grate the zest of one lime or lemon over the pasta, adding a refreshing citrus note. Stir again and adjust seasoning with salt and pepper if necessary. Serve the dish hot, and enjoy the combination of tender chicken, succulent prawns, and flavorful vegetables on your plate.
