Tumis Kangkung with Beef and Quail Eggs

Ingredients:

  • 250 grams beef
  • 1 bunch of water spinach (kangkung)
  • 10 quail eggs
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons oyster sauce
  • 1 tablespoon fermented soybean paste (tauco)
  • 2 tablespoons cornstarch
  • 1 teaspoon ground pepper
  • 2 cloves garlic
  • 2 cm piece of ginger
  • 5 tablespoons cooking oil
  • 150 ml water
  • 1 1/2 teaspoons sugar

Instructions:

  1. Prepare the Beef:

    • Wash and boil the beef until tender. This may take some time, so be patient as the beef needs to be soft enough to blend well with the other ingredients.
  2. Prepare the Water Spinach:

    • While waiting for the beef to cook, pick the leaves and tender stems of the water spinach. Wash thoroughly and drain to remove excess water.
  3. Season the Beef:

    • Once the beef is tender, remove it from the boiling water and let it cool slightly. Cut the beef into small pieces, approximately the size of one and a half finger segments.
    • In a mixing bowl, season the beef pieces with 1/2 teaspoon salt, ground pepper, 2 tablespoons of sweet soy sauce, 1 tablespoon of oyster sauce, fermented soybean paste, and cornstarch. Mix well to ensure the beef is evenly coated with the seasonings. Let it marinate for about 45 minutes to allow the flavors to meld.
  4. Cook the Quail Eggs:

    • Boil the quail eggs until they are fully cooked. Once done, peel the eggs and set them aside.
  5. Prepare the Aromatics:

    • Pound or finely chop the ground pepper, garlic cloves, and ginger to create a fragrant spice paste.
  6. Sauté and Combine:

    • In a large pan or wok, heat 5 tablespoons of cooking oil over medium heat. Add the spice paste and sauté until fragrant.
    • Add the marinated beef to the pan and stir-fry for a few minutes until the beef is slightly browned.
    • Incorporate the water spinach, quail eggs, and 150 ml of water into the pan. Stir well to combine all the ingredients.
  7. Season and Cook:

    • Add the remaining 1 tablespoon of oyster sauce, 1 tablespoon of sweet soy sauce, 1/2 teaspoon salt, and 1 1/2 teaspoons of sugar to the pan. Mix thoroughly.
    • Continue to cook for a few more minutes until the water spinach is wilted, and the liquid has reduced by half, creating a flavorful sauce that coats the ingredients.
  8. Serve:

    • Remove the dish from the heat and transfer to a serving plate. Serve immediately with warm rice to enjoy the delicious combination of savory beef, tender quail eggs, and fresh water spinach.
