Agar-Agar Panna Cotta with Fresh Strawberries

Instructions

  1. Begin by preparing the strawberries: rinse them thoroughly under cold running water. Slice about half of them and arrange them neatly on a large plate, ensuring that they are placed next to each other. Sprinkle the sliced strawberries with 20g of sugar, and set them aside to macerate. Allow them to rest for a while so they can release their natural juices.

  2. Take the remaining strawberries and place them in a blender, adding 30g of sugar. Blend the mixture until smooth. Once pureed, pass the mixture through a fine sieve or mesh strainer using a spatula to remove any seeds. Set the strained strawberry mixture aside.

  3. In a medium-sized saucepan, pour in the fresh cream along with the 130g of sugar. Stir the mixture with a whisk to combine the ingredients well. Place the saucepan over medium heat and gently bring the mixture to a simmer. Make sure to stir constantly to prevent the cream from burning. Once it begins to heat up, sprinkle in the agar-agar powder, stirring continuously to ensure that it dissolves completely. Let the mixture simmer for a couple of minutes to activate the agar-agar.

  4. Once the cream mixture is ready, remove the saucepan from the heat. Pour the hot cream into individual serving glasses or molds, filling them about three-quarters full.

  5. Place the filled glasses in the refrigerator and allow them to chill for at least 3-4 hours, or until the panna cotta has set firmly.

  6. Once the panna cotta is fully chilled and set, carefully run a smooth knife around the edges of each glass to loosen the panna cotta. This will help release it when serving.

  7. For the finishing touch, garnish each panna cotta with a whole strawberry and a sprig of fresh mint. The vibrant strawberry topping will not only add a pop of color but also enhance the dessert’s flavor.
