Strawberry Grape Gelato in Waffle Cones Recipe

Instructions

Step 1: Prepare the Gelato

  1. Start by preparing the strawberry grape gelato. First, rinse the strawberry grapes well, and then remove all the individual berries from the stems.
  2. Place the whole grapes (including skins and seeds) in a blender. Blend until you have a smooth, homogeneous puree.
  3. Next, separate the pulp from the seeds and skins by passing the puree through a fine mesh sieve set over a bowl.
  4. Squeeze the juice of half a lemon and add it to the grape pulp. Mix well with a spoon to combine.
  5. Cover the mixture with plastic wrap and chill it in the refrigerator until it reaches the desired temperature.
  6. Once the mixture is chilled, rapidly cool it using a blast freezer or pour it into a pitcher for a quicker cool-down.
  7. Transfer the cooled mixture into an ice cream maker and churn for 30 to 35 minutes, or until the gelato reaches a creamy consistency.

Step 2: Make the Waffle Cones

  1. For the waffle cones, begin by whisking the egg white with a pinch of salt until stiff peaks form. Set it aside.
  2. Melt the butter over low heat and pour it into a mixing bowl.
  3. Add the sugar to the melted butter and stir until the mixture is well combined.
  4. Line a baking tray with four squares of parchment paper, each measuring around 17 cm. On each square, place a tablespoon of the batter and spread it out into a thin circle, approximately 12 cm in diameter, using the back of the spoon.
  5. Bake the wafers in a preheated static oven at 180°C (350°F) for 5 to 10 minutes, or until golden and crisp. Keep an eye on them to avoid burning.

Step 3: Serve

  1. Once the gelato has reached the perfect creamy consistency, remove it from the ice cream maker and transfer it into serving bowls or waffle cones.
