Sugar (for waffles) | 40 g |
Instructions
Step 1: Prepare the Gelato
- Start by preparing the strawberry grape gelato. First, rinse the strawberry grapes well, and then remove all the individual berries from the stems.
- Place the whole grapes (including skins and seeds) in a blender. Blend until you have a smooth, homogeneous puree.
- Next, separate the pulp from the seeds and skins by passing the puree through a fine mesh sieve set over a bowl.
- Squeeze the juice of half a lemon and add it to the grape pulp. Mix well with a spoon to combine.
- Cover the mixture with plastic wrap and chill it in the refrigerator until it reaches the desired temperature.
- Once the mixture is chilled, rapidly cool it using a blast freezer or pour it into a pitcher for a quicker cool-down.
- Transfer the cooled mixture into an ice cream maker and churn for 30 to 35 minutes, or until the gelato reaches a creamy consistency.
Step 2: Make the Waffle Cones
- For the waffle cones, begin by whisking the egg white with a pinch of salt until stiff peaks form. Set it aside.
- Melt the butter over low heat and pour it into a mixing bowl.
- Add the sugar to the melted butter and stir until the mixture is well combined.
- Line a baking tray with four squares of parchment paper, each measuring around 17 cm. On each square, place a tablespoon of the batter and spread it out into a thin circle, approximately 12 cm in diameter, using the back of the spoon.
- Bake the wafers in a preheated static oven at 180°C (350°F) for 5 to 10 minutes, or until golden and crisp. Keep an eye on them to avoid burning.
Step 3: Serve
- Once the gelato has reached the perfect creamy consistency, remove it from the ice cream maker and transfer it into serving bowls or waffle cones.
- Serve the strawberry grape gelato in the freshly made, crispy waffle cones for a delightful and refreshing dessert experience!
