Instructions
-
Prepare the Dough:
Begin by extracting the seeds from the vanilla bean. Slice the vanilla bean lengthwise, and scrape out the seeds with the back of your knife. In a stand mixer, combine the softened butter and sugar. Beat until smooth and creamy. Add the egg yolks one at a time, continuing to mix until fully incorporated. -
Combine Dry Ingredients:
In a separate bowl, sift the all-purpose flour and a pinch of fine salt. Gradually add the dry mixture to the wet ingredients while mixing at a low speed. Once the mixture comes together, add the lemon zest and vanilla seeds. Mix until everything is well combined into a smooth dough. -
Roll and Chill the Dough:
Place the dough onto two sheets of parchment paper. Roll it out with a rolling pin into a rectangle measuring approximately 28×38 cm (11×15 inches), with a thickness of about half a centimeter. Once rolled out, place the dough in the refrigerator to rest for about 10 minutes. This will allow the dough to firm up. -
Shape the Dough:
After chilling, remove the top layer of parchment paper. Using the bottom sheet of parchment as a guide, carefully start rolling the dough into a tight log. Once rolled, wrap it up in the parchment paper and refrigerate for another 10 minutes to set further. -
Form the Spirals:
After the dough has chilled, gently shape it into a round log by hand, adjusting as needed to ensure an even shape. Refrigerate again for about 30 minutes to allow the dough to firm up completely. -
Slice the Cookies:
Once the dough is fully chilled and firm, remove the parchment paper. Using a serrated knife, carefully slice the dough into approximately 25 pieces. This method helps preserve the spiral shape of the cookies. -
Chill Before Baking:
Place the sliced cookies on a baking tray lined with parchment paper. Refrigerate them again for 10 minutes to ensure they keep their shape during baking. -
Bake the Girandole:
Preheat the oven to 180°C (350°F) for a static oven or 160°C (320°F) for a fan-assisted oven. Bake the cookies for 18 minutes, or around 10 minutes if using a fan oven. The cookies should be lightly golden at the edges. -
Cool and Serve:
Once baked, remove the cookies from the oven and allow them to cool completely on a wire rack. Once cooled, these delicious, jam-filled spirals are ready to be enjoyed as a sweet treat!
Perfect for an afternoon snack or a special dessert, these Girandole with strawberry jam are a delightful, buttery indulgence!
