Strawberry and Mascarpone French Toast Recipe

Category: Desserts
Servings: 4
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Total Time: 20 minutes

Ingredients:

Ingredient Quantity
Whole wheat bread (pancarrè integrale) 8 slices
Eggs 2
Whole milk 60g
Strawberries 200g
Mascarpone cheese 550g
Honey 30g
Ground cinnamon 1 pinch
Butter 40g

Instructions:

Step 1: Prepare the Filling

  1. Begin by preparing the mascarpone filling. In a small bowl, combine the mascarpone cheese and honey, stirring until smooth and well incorporated.

  2. Wash the strawberries thoroughly, remove the stems, and pat them dry. Slice them lengthwise into medium-thin slices (not too thin, for a satisfying bite).

Step 2: Assemble the French Toast

  1. Take four slices of whole wheat bread and spread the mascarpone mixture evenly on one side of each slice.

  2. Layer the fresh strawberry slices on top of the mascarpone on each slice of bread. Cover the strawberry-laden slices with the remaining four slices of bread, ensuring that the mascarpone-coated sides are facing the strawberries. Gently press them together to hold the filling in place.

Step 3: Prepare the Egg Mixture

  1. In a shallow bowl, crack the eggs and add the whole milk. Whisk together with a fork until the mixture is smooth and well blended.

Step 4: Cook the French Toast

  1. In a large, non-stick skillet, melt the butter over medium heat.

  2. Carefully dip one of the assembled bread slices into the egg mixture, making sure it’s evenly soaked on both sides. Transfer the soaked bread to the hot skillet.

  3. Cook the bread for about 2-3 minutes per side, or until golden brown and crispy on both sides.

  4. Once done, remove the French toast from the skillet and place it on a cutting board. Slice each piece diagonally to create two triangles.

Step 5: Serve and Enjoy

  1. Repeat the same process for the remaining French toast slices.

  2. Serve the French toast warm, either as-is or with a dusting of powdered sugar and extra fresh strawberries, if desired. The sweet and creamy mascarpone paired with the juicy strawberries makes for a delicious treat that’s perfect for breakfast, brunch, or a special dessert.

Enjoy your warm and indulgent Strawberry and Mascarpone French Toast—a delightful combination of crispy, sweet, and creamy textures in every bite!
